Yes - you can create a configuration profile for Traveler
I've done this and successfully deployed them via DropBox - because you can lock the profile and prevent the user from removing it when deployed via a configuration profile.
In the Exchage ActiveSync section, configure the account name (this is what shows in the account settings on the iPhone).
I set the Host as <server name>/servlet/traveler as you noted, left the Use SSL box ticked and left everything else blank on that screen. The user will be prompted for the user name, email address and password when they install the profile.
If you fill in user name and password, you need to create a separate profile for each user.
For the user name, this will depend on your Domino security settings - short name, full hierachical Notes name or email address (anything you can log into iNotes with).
